Kitchen Manager / takes direction from Cook 1 and Manager on Duty


Summary of Position:  

The Cook Line Assistant position is a part of the Back of House Team and the pay rate is $7.25-$9.00 hour based on experience, tenure and overall contribution.  This is a non-tipped position.  The Cook Line Assistants have duties that range from dishwasher, food preparation and assisting on the cook line. In general a Cook Line Assistant’s primary responsibility will be prepping food including portion sizes and proper receipt management, washing dishes that are brought to the dish rooms by the Front of the House Team and making sure the dish room is well organized and clean. A Mellow Mushroom shirt and a hat must be worn at all times.Good personal hygiene is a must, no strong perfumes i.e. applying to much of a scent, patchouli oil, etc.

Duties & Responsibilities:

Cook Line Assistant’s will prepare a variety of meats, poultry, vegetables and other food items by using a variety of kitchen equipment. Employee knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen policies and procedures. Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period and reports to Kitchen Manager or Manager on Duty if we are low on product or are out of items. Stores and rotates all products properly and completes food prep assignments during off-peak periods as needed. Maintains a clean and sanitary work station area which includes: prep tables, shelves, food preparation equipment and dish area. Completes daily checklists and loads, runs, and unloads dish machine. Maintains adequate levels of clean tableware for dining room and kitchen. Keeps the dish machine clean and reports any functional or mechanical problems immediately. Maintains adequate levels of dish detergents and cleaning supplies. Closes the kitchen properly and follows the closing checklist for all kitchen stations. Bags and hauls dish room trash to dumpster at designated times. Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor. Attends all scheduled employee meetings and brings suggestions for improvement.


Be able to communicate (both verbal and written) in the predominant language of the guests. No previous restaurant experience required.  Be able to work in hot, wet, humid and loud environment for long periods of time.  Be physically able to lift, reach, bend and stoop.  Be able to work in a standing position for long periods of time (up to 8 hours) and be able to work up to 8 hours without smoking a cigarette.
