Summary of Position:
The position of a cook line assistant is part of the back of house team. This position is paid an hourly rate of $7.25-$9.00 based on experience, tenure, performance and overall contribution. Cook line assistants have duties range from dishwasher to food preparation to assisting on the cook line. In general a Cook line assistant’s primary responsibility will be prepping food including portion sizes and proper recipe management, washing dishes that are brought to the dish rooms by the front of house staff and making sure the dish room is well organized and clean. This is a non-tipped position.
Duties & Responsibilities:
Cook Line Assistant’s will prepares a variety of meats, poultry, vegetables and other food items for cooking in, ovens, grills, and a variety of other kitchen equipment. Employee assumes 100% responsibility for quality of products served. Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures. Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period and reports to manager on duty if we are low on product or out of items. Maintain a clean and sanitary work station area including tables, shelves, grills, convection oven, flat top range and refrigeration equipment. Additionally, prepares item for grilling, sautéing or other cooking methods by portioning, seasoning and/or marinating. Handles stores and rotates all products properly. Complete food prep assignments during off-peak periods as needed. Closes the kitchen properly and follows the closing checklist for all kitchen stations. Assist others in closing the kitchen. Attends all scheduled employee meetings and brings suggestions for improvement. Performs other related duties as assigned by the Kitchen Manager or manager-on-duty. Complete daily checklist. Load, run and unload dish machine. Keep the dish machine clean and report any functional or mechanical problems immediately. Monitor dish machine water temperature to ensure sanitary wash cycle. Wash and store all tableware and kitchenware. Keep dish room and BOH clean and organized. Maintain adequate levels of clean tableware for dining room and kitchen. Bag and haul dish room trash to dumpster at designed times. Ensures that dumpster door is shut at all times. Notify manager on duty if dumpster is full or almost full. Handle tableware carefully to prevent breakage and loss. Maintain adequate levels of dish detergents and cleaning supplies. Clean food preparation and production areas as required. Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the restaurant manager or immediate supervisor. Wash all towels, aprons etc. if applicable. A Mellow Mushroom shirt must be worn at all times. Good personal hygiene is a must, no strong perfumes i.e. applying to much of a scent, patchouli oil etc. Attend all scheduled employee meetings.
Be able to communicate (both verbal and written) in the predominant language of the guests. No previous restaurant experience required. Be able to work in hot, wet, humid and loud environment for long periods of time. Be physically able to lift, reach, bend and stoop. Be able to work in a standing position for long periods of time (up to 8 hours). Be able to safely lift bags, cases and stacks weighing up to 60 pounds up to 30 times per shift. Be able to go up to 8 hours without smoking a cigarette. I have read and understand this job description along with the BOH training manual. Valid health card required.
