The assistant manager willhave emphasis on either the front of the house or back of the house depending on level of expertise. Pay rate is $10.00-$15.00 hour based on experience, tenure and overall contribution. This is a non-tipped position. Responsibility includes assistingService Manager and Kitchen Manager in all leadership tasks. The Assistant Manager is responsible for having full understanding of the general operations of the entire restaurant including the POS system, cash closing duties, as well as the closing duties of FOH and BOH staff. Assistant managers will have keys to the restaurant. Only in emergency situations will the assistant manager, if under the age of 21 be required to be on duty by themselves. In several situations the assistant manager will also perform duties outside of this role including bar tender and or server.
Duties & Responsibilities:
Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards. Communicate employee issues to the manager on duty and document employment files as appropriate. Collaborate with the manager on duty related to employee termination decisions, interviewing, hiring, evaluating and disciplining. Fill in where needed to ensure guest service standards and efficient operations. Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner. Establish portion sizes for all new menu items. Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s and products preventative maintenance programs. Work with other restaurant management to plan and price menu items. Establish portion sizes and prepare standard recipe cards for all new menu items including all bar products. Ensure that all products are ordered according to predetermined product specifications and received in correct unit count and condition. Overseedeliveries are performed in accordance with the restaurant’s receiving policies and procedures. Control food cost / bar cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures may be required. Schedules with consideration to meet labor cost objectives based on anticipated business activity with adequacy in staffing all positions to accommodate the needs of the restaurant. Be knowledgeable of restaurant policies regarding personnel. Administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures. Help supervise personnel training for safe operation. Personallyascertain TABC laws are followed to fullest extent through personal inspection of bar procedures. Includes, but is not limited to personal verification of all alcohol that is classified as a void, spill or loss of product due to keg replacement. Be knowledgeable of restaurant policies regarding personnel. Provide safety training in first aid, CPR, lifting and carrying objects and handling hazardous materials.Attend and assist in scheduling and planning employee meetings.
A minimum of 2 years of experience in restaurant functions. Assistant managers must be able to trained and able perform all restaurant duties in both the front and back of the house capacity. Including but not limited to food preparation, line cook, expediter, server, bartender, and host. At least 6 of months experience in a similar capacity demonstrating leadership culpability.Be able to communicate and understand the predominant language(s) of the restaurant’s clientele, and communicate clearly with managers, dining room personnel and guests. Be able to reach, bend, stoop and frequently lift up to 50 pounds. Be able to work in a standing position for long periods of time (up to 8 hours). Work up to 8 hours without a cigarette.Effectively operate restaurant POS system, and demonstrate exceptional math skills for the handling of cash drawers and daily deposits.
