St. Louis, MO (December 30, 2022) – Pizza lovers have a new choice with the opening of a new Mellow Mushroom restaurant in Chesterfield. The latest addition to the Mellow Mushroom family is located at 15525 Olive Blvd, Chesterfield, MO 63017. The brand’s stone-baked pizzas, great local brews and hand crafted cocktails, along with freshly made salads and a wide assortment of munchies, are now available for dine-in guests as well as online ordering.

St. Louis is famous as the “Gateway to the West,” and the operators, Michael Vienhage and John Burke, want to make their restaurant — their second location in St. Louis — the local gateway to great food and drink. Each Mellow Mushroom is unique in its design and décor and the Chesterfield location reflects a modern take on a mid-century design style.

The cornerstone of the Mellow Mushroom menu is stone-baked pizza featuring a crust made from five simple ingredients, including water from Appalachian mountain springs. Other menu highlights are freshly made salads, munchies, burgers, handcrafted cocktails, and a wide selection of beers, many of them local.

Highlights of the Mellow Mushroom Chesterfield location design include:

  • A giant “LOVE” art installation at the entrance to the restaurant
  • The waiting area is anchored by an art installation featuring a colorful mushroom painting surrounded by butterflies fabricated from vinyl  records 
  • Oversized stylized mushroom columns fill the dining area

The store wouldn’t be complete without reference to the music from the area, specifically the blues. The restaurant features a unique table designed as an oversized vinyl record that honors St. Louis native and legendary musician Miles Davis.

While many Mellow Mellow locations around the country have separate event rooms, this is the first branded as “Club Mellow.” This private dining room seats 34 guests.

ATLANTA (December 27, 2022) – With the new year and customers’ renewed focus on health, Mellow Mushroom, the originator of hand-tossed, stone-baked classic Southern pizza, is introducing a “Build Your Own Vegan Pizza” option to the Build Your Own Pizza section of its menu. The launch comes in support of Veganuary, which encourages people to follow a vegan diet for the month of January.

A plant-based diet can improve your health and support environmental sustainability. Mellow Mushroom is supporting nonprofit Veganuary by providing many options for vegan guests. These include making it easy by offering delicious vegan pies, vegan ingredients, a dedicated online vegan menu category and, beginning in January 2023, a new dining room vegan menu.

With 19 ingredients on the new “build your own vegan pizza” section, diners can create a custom vegan pizza to fit their preferred tastes and dietary needs. They can select ingredients that include tempeh and Follow Your Heart® dairy free cheese.

ATLANTA, November 2, 2022 – Mellow Mushroom has launched a newly designed menu at all 160+ restaurants that is a colorful combination of ultramodern and retro. The menu cover art was created by Florida artist Joshua Noom and pays homage to previous design elements used by Mellow Mushroom on t-shirts, advertising, and menu design.


The new menu art inspired the Mellow Wonderland holiday merchandise, which is available for sale at theyellowroom.com. Purchases of Mellow Wonderland merchandise help to benefit CORE (Children of Restaurant Employees), a non-profit that helps restaurant operations employees with children who face a health crisis or natural disaster. The menu and merchandise promotion begins on November 1, 2022 and runs through December 31, 2022.


Mellow Mushroom focused on a dynamic new menu with eye-catching typography to match the personality of the flavor profiles within the different sections of the menu. This “maximalism” style element – with extreme saturation of colors – enhances the menu’s combination vintage and futuristic feel. The design includes references to 1970’s ultra-graphic concert-looking posters which share Mellow Mushroom’s passion for creativity, quality ingredients, and hand tossed stone baked pies.

Charity Partnership Supports Restaurant Industry


Mellow Mushroom is partnering with CORE (Children of Restaurant Employees) between November 1, 2022 and December 31, 2022. The brand is donating a portion of all sales from the new menu-inspired Mellow Wonderland merchandise collection for a minimum donation of $10,000. CORE engages a national network of corporate partners, sponsors, and donors to provide financial support and lend their voice to aid food and beverage employees with children who face health, natural disaster, or other crises. Documentation is required and an employee that may qualify can apply at www.coregives.org.


“During my time serving the food and beverage industry, I have met many restaurant employees with children that face adversity when a medical crisis hits or they lose their home or place of work due to a natural disaster,” said Sheila Bennett, CORE’s Executive Director. “We are grateful to partner with Mellow Mushroom to raise funds to help these families when life doesn’t go as planned and they face one of these crises.”

ATLANTA, November 18, 2022 Mellow Mushroom has created a special cocktail for the holidays, a unique version of the classic Old Fashioned. Mellow Mushroom’s “St. Nick’s Old Fashioned” is a delicious take on the classic beverage, featuring premium ingredients with balanced flavors. It is available at Mellow Mushroom from October 25, 2022 until January 9, 2023.

The St. Nick’s Old Fashioned recipe features High West Double Rye Whiskey, Skrewball Peanut Butter Whiskey (contains nuts), Kahlua Coffee Liqueur, simple syrup, and Angostura Bitters with a lemon twist garnish.

“We want to establish Mellow Mushroom as a place to celebrate with a cocktail during the holiday season and lean into Mellow’s ability to blend flavors to make delicious craveable cocktails,” says Nick Arenas, Director of Beverage at Mellow Mushroom.

Key Ingredients – St. Nick’s Old Fashioned (Item is dine-in only):

  • High West Double Rye Whiskey – A unique and balanced flavor profile of cinnamon, gingersnaps, juniper, mint sprigs, and fresh wildflower honey.
  • Kahlúa Coffee Liqueur – Originated in Mexico in 1936 and features the deep, rich flavor of real black coffee, roasted chestnut, and indulgent sweet butter.
  • Skrewball Peanut Butter Whiskey* – A little salty, sweet, savory, and consistently smooth, with a natural peanut butter flavor. *Contains Nuts
  • Angostura Bitters – Adds a layer of complexity, intensifies the flavor of other ingredients, and decreases the harshness of spirits.
  • Flavor Profile – The rye whiskey creates the base with a bold spice character that, along with the angostura bitters, balances the simple syrup sweetness. The Kahlúa adds a hint of coffee and Skrewball adds a soft peanut butter finish.

Since Mellow Mushroom opened its doors in 1974, inclusivity has been a core value of its business. The stone-baked pizza maker accepts all people on a come as you are basis.


Mellow Mushroom merchandise reflects this “Come One. Come All.” sentiment and brand values. To celebrate Pride Month, The Yellow Room will introduce a collection of Pride apparel and accessories that includes t-shirts ($25), sweatshirts ($50), bandanas ($8), headbands ($11), caps ($25), PopSockets ($11), koozies ($4), fanny packs ($14), and stickers ($2).

ATLANTA, June 27, 2022 – As the summer solstice arrives, Mellow Mushroom kicks off the season with a splash of new flavors and combinations, including munchies, hoagies, and salads, on June 21, 2022. At the same time, Mellow is introducing a new beverage menu, featuring a selection of Sangrias, Wines, Liquid Karma Cocktails, and signature Mystic Margaritas.

  • The Big Dipper– A trio of appetizers: Cool Avocado Smash, Bruschetta mix with diced tomatoes, fresh basil, authentic sheep’s milk feta, and Fire Roasted Pineapple Pico. Served with organic blue corn tortilla chips and toast points. Perfect for dipping or sharing.
  • Big Shoulders Hoagie – Bring big flavor to the table with juicy shaved rib-eye steak and onions grilled in garlic butter, sliced Roma tomatoes and pickles, lettuce and just enough feisty Rad relish to give this sandwich a kick. Covered in provolone served on a garlic buttered hoagie roll.
  • Secret Garden Salad – This salad is a mouthwatering mix of strawberries, cucumbers, fire-roasted pineapple, and fresh greens topped with toasted coconut and authentic sheep’s milk feta cheese (regular size only). Try it with pomegranate acai dressing or add Springer Mountain Farms chicken or applewood smoked bacon (additional charge).

Mellow Mushroom is known for its quality ingredients and generous portions made fresh to order for guests. Mellow is extending other popular recent menu additions through the summer including: 

  • Pretzel Bites with Spicy Beer Cheese – Spicy beer cheese is made with Mellow’s own Rad Relish, a giardiniera-style spicy pepper mixture, and garnished with pickled jalapeno pepper.
  • Southside Wings – Mellow twice-baked wings are coated in Rad Relish, giving the wings a robust flavor with just the right amount of heat (nine-piece serving).
  • Pineapple Express Mocktail and Cocktail – The Pineapple Express blends fruity pineapple, sweet coconut, and peppery turmeric spice – balanced with house-made agave sour. Available spiked with Flor de Caña seven-year-aged rum for an additional charge or as an alcohol-free mocktail.
  • Campfire Peach Margarita (back by popular demand!) – The smokey flavor comes from the combination of Casamigos Blanco tequila and Casamigos Joven mezcal, peach puree, jalapeno, and house-made Agave sour. It’s garnished with a lime wheel and half a peach sugar and salt rim.

Mellow Launches New Beverage Menu

“In 2022, Mellow Mushroom expects to see growth in craft cocktails and non-alcoholic mocktails, and will continue to offer premium choices in the beverage category. The new Mellow Mushroom beverage menu was designed to include sangrias and mocktails, which we anticipate will be very popular as guests look for unique beverage options,“ says Mejia. “With more spice on the food menu, Mellow guests can enjoy some new custom beverages to cool things down, including sangrias, wines, cocktails, margaritas, and mocktails.”


Sangrias – Mellow is introducing a new, super-premium take on the classic Sangria, featuring fresh fruit and Hennessy V.S Cognac.

  • Rotating Selections – This menu item will change twice per year to bring in new flavors. Each Sangria is made fresh to order, from all-natural ingredients. 
  • Purple Reign Sangria – This summer offering is music to your lips, featuring an assortment of fresh berries jamming to the tune of Hennessy VS Cognac, Bonanza Cabernet Sauvignon (further enhances the fruity and slightly tart flavor of the drink), Black Cherry Puree, and Fee Brothers Rhubarb Bitters.


Wines – Mellow guests can now enjoy wine in a variety of pour sizes – including a 6oz glass, a 9oz glass, or a bottle. These varying pour sizes provide guests the opportunity to try multiple different wines or indulge in their favorites. Each of the wines on the Mellow list is premium, from renowned wineries like the Wagner Family, and the winemakers behind Caymus, Jackson Family, Kim Crawford, and La Marca.


Liquid Karma Cocktails – This category includes several popular signature cocktails, including the Sunset in Paradise, Golden Goose, and Peach Buzz, and introduces two new creations.

  • Lemon Submarine – Made with Woodford Reserve Bourbon, St-Germain Elderflower liqueur, freshly brewed iced tea, rosemary, and fresh sour. Garnished with a lemon wheel and rosemary sprig. This drink combines lemon and tea with vanilla and caramel notes from a classic Kentucky bourbon, and just a hint of tropical fruity and floral flavors from St-Germain Elderflower liqueur.
  • Mule the World – Takes guests on a trip around the world, starting with the classic Mule recipe which includes delicious Fever-Tree Ginger Beer and house-made lime syrup. Guests can select from their choice of premium spirits for a unique Mule experience, including Ketel One Vodka, Don Julio Blanco Tequila, Bulleit Frontier Bourbon, Crown Royal Canadian Whisky, or Captain Morgan Spiced Rum.


Mystic Margaritas – This section of the menu highlights the RB Margarita, the Made Wild Margarita, the Gone Feral Margarita, and the Campfire Peach Margarita, and gives guests the opportunity to experience the breadth of what tequila offers – from a clean bright Blanco, through different aged Reposado and Anejo tequilas, and finally the smoky and slightly herbal Mezcal.


New for 2022 is the “Local to Your Mellow” cocktail section, where local Mellow owners can select cocktails that best fit their individual location’s guest tastes and preferences.

ATLANTA, June 22, 2022 — Mellow Mushroom this week launched an innovative new recruiting tool for employee hiring and retention using Tiktok and Instagram videos. The new content goes live on June 23 and is designed by social media influencer and creator, Drew Talbert.



The social media video will be used to find talented candidates for Mellow’s “Operations Coach” positions, a role that focuses on building operational excellence among the company’s 170 restaurants. The brand will be looking to find several talented people for the Operations Coach positions in the coming months.

Mellow expects that hiring from within for the Operations Coaches will result in a stronger resource for Mellow franchisees. Hiring team members who already know Mellow Mushroom operations will speed the hiring process, and reduce onboarding and training time. It will also reduce the overall cost to find candidates.



Foster adds: “We will never say no to great talent. Our preference is to hire team members who have Mellow experience at the restaurant level and have passion for the brand.”



Drew Talbert is a creator who’s worked with Mellow Mushroom. He has almost two million followers on TikTok, almost 400,000 on YouTube, and more than 300,000 followers on Instagram. Talbert has created a full cast of Mellow characters for social media, playing all the roles himself.



“Mellow Mushroom gets it! They understand that reaching potential employees means using fun, engaging videos that resonate with their audiences,” said Drew Talbert. “I worked for more than two decades in restaurants and understand the dynamics that drive and influence those on the front lines. For this project, I created a social media video to reach prospects on their favorite social media channels. Tiktok and Instagram.”



Later this summer, a second phase of the Mellow Mushroom recruiting campaign will launch with a focus on attracting new hourly employees to Mellow Mushroom restaurants.
